almost there…

One more week until my break…just one more week(!)…I’ll be writing a few papers and a take-home exam during it though but whatever it’s still a break.

This week I made Lemony Chickpea Lentil Soup from Eat, Drink & be Vegan. This was soo good, the perfect comfort soup for cold weather. I couldn’t really taste the lemon but to be honest I’m not that huge of a lemon fan so that was fine by me. What I really loved about this is the texture, it’s a soup you can sip but it is by no means watered down, it’s totally a soup of substance. Look at my new dishes! I love them, especially since they were 50% off. Last weekend I got quite a few good sales on various dishes (which you’ll be no doubt seeing in my photos soon).

Lemony Chickpea Lentil Soup

These are quite possibly my favourite cookies ever. Big Gigantoid Crunchy Peanut Butter-Oatmeal Cookies (with chocolate!) from Vegan with a Vengeance. They’re perfect, so peanut butter-y and not to mention they are HUGE. But I don’t let that stop me from eating a few in one sitting. If you haven’t made these already MAKE THEM.

Sigh.  Class resumed this past Monday and I’m still in break mode.  I’m really not ready to commit myself to the steadily growing list of readings, assignments and whatnot.  But of course I already have, because I am one of those neurotic-ly dedicated students.  So I’m back to making meals that will last most or all of the week.  This week I have been dining on Creamy Tomato Soup from Veganomicon.  This is some stellar soup, it’s so deliciously creamy and tasty with the interesting touch of sun-dried tomatoes.

Besides being excellent fare for students, I have discovered that it is also suitable food for those under the weather.  Yup, rather early in the semester this time around I think I may have picked up some sort of bug as I woke this morning rather exhausted and very ache-y.  Urgh. 

Tomato-Rice Soup with Roasted Garlic and Navy Beans

Brrr.  My furnace quit this morning and it is a tad chilly.  I’m glad I made the Tomato-Rice Soup with Roasted Garlic and Navy Beans from Veganomicon last night so I have plenty of warm, comforting leftovers.  You know, I’ve been cooking almost exclusively from this book lately and I think it may be my favourite cookbook ever of all time, everything I’ve made has been stellar.

I have the day off work today so I’ll probably be spending this rather messy (snow/rain) day baking.  I’m thinking it (along with this soup) will help me stay warm.

Tofu Noodle Soup

Urgh.  You know that feeling you get just before you get sick?  That drained and kind of sniffly feeling?  Well, I had that feeling last night so I made this soup to help me combat the oncoming cold. 

This is Eat Peace Please’s Tofu Noodle Soup and it was delicious, comforting-it made me feel all warm and fuzzy.  I opted out of the celery called for because celery and I do not get along, and added mushrooms, chopped sweet potato, and green pepper-pretty much whatever I had in the fridge to use up.

Sure enough, I woke up this morning with my head pounding, a sore throat and a congested nose.  What’s wrong with these germs?  Can’t they see I simply don’t have the time to be sick?!  Oh well, at least I have this lovely soup to help me through this.
