Spinach & Mushroom Lasagna

Spinach & Mushroom Lasagna topped with Parmezano Sprinkles from the Uncheese Cookbook.

This was really good, I think next time I’ll play around with the spices a bit to my personal preferences (read:more garlic).  I tried to feed it to my mother, she had a bite but freaked out when she discovered it had tofu.  Sigh…someday she’ll accept the wonderfulness of the bean curd.

    I too love tons of garlic in appropriate dishes (especially pasta dishes) – this lasagna looks scrumptious. hopefully your mom will give tofu another chance!
